How-To
You can use the whole chicken to feed your family and make four different meals from this one chicken. Start with one raw 4-pound chicken.

Chicken breasts with vegetables and brown rice
Cut the two breasts from the chicken into four pieces. Pair it with brown rice and vegetables. This meal is very healthy and you can serve it up family style.

Roasted chicken legs and thighs with potatoes and vegetables
We’ve taken the two legs and two thighs and put them in a baking dish, surrounded by potatoes, carrots and onions. Brush it with olive oil and place it in the oven.

Enchiladas
To make enchiladas, you’ll need to use the carcass of the chicken. It’s important to use the carcass, because it’s full of meat. When you take the carcass and put it in a pot of water to cook, then what comes out of it is more meat. With that meat, you can make chicken enchiladas.

Chicken noodle soup
From the carcass of the chicken, you can also make a broth. Then you add to it vegetables, egg noodles and there you go -- chicken noodle soup.

Chick rice “paella”
You can even make a fifth meal. With the gizzards, wings and livers from the whole chicken, you can make chicken rice paella.

For the rice:
1 tablespoon of vegetable oil
2 chicken wings
2 chicken tenderloins, chopped
chicken liver, chopped
chicken gizzard, chopped
3 plum tomatoes, pureed
(or you can use half a 14-ounce can of whole tomatoes pureed)
20 green beans
4 garlic cloves
4 cups water
1 cup rice
salt

For the pipirrana (optional)
1 cucumber, diced
2 plum tomatoes, diced
vegetable oil
salt

Directions:
In a large sauté or paella pan, heat one-half cup of oil over medium-high heat. Sear the chicken wings and the tenderloins until they are golden brown. Add garlic. Cook for about one minute. Stir in green beans and cook for one minute.

Add the chopped chicken liver and gizzard. Cook for another minute or so. Stir in the tomato puree and allow to cook for another minute. Add water to the pan and bring it to a boil. After the water has begun to boil, stir in your rice and continue to stir until the ingredients are distributed evenly.

Return the chicken wings and the tenderloin to the pan. Reduce the heat to a simmer and cook for about 20 minutes without stirring. As the rice is cooking, toss the tomatoes and cucumbers together with a little oil and salt to make the pipirrana.
